Baked Egg Bites

‘Tis the season of cooking at home for the family! This week, I’m sharing my quick and easy Fresh Baked Egg Bites – perfect for your holiday brunching needs!

Ingredients: 

  • 1 slice of prosciutto crudo or bacon
  • 1 organic egg
  • chives
  • Freshly ground black pepper
  • Shredded goat cheese

Instructions: 

  • Preheat oven to 375 degrees. Line one ramekin or muffin pan with a slice of prosciutto or bacon – it’s okay if some of it drapes over the edge. Crack the egg into the meat-lined ramekin or muffin pan. Add a dash of black pepper and a sprinkle of chopped chives. Sprinkle goat cheese. Bake for 15 mins.
