Those are words that NEVER come out of my kids mouths. And to be clear, this is not my recipe, but rather the ingenious concoction of Hayley Ryczek of Heath Starts in the Kitchen. On a scale of easy this is a 10. I spent less than 20 minutes preparing this meal. On taste, this is a 9. Next time, I will spice it up some–maybe use more of the chipotle peppers in adobo (disclaimer: we like things HOT, so if you are a not-a-spicy-meal kinda family, this will be a 10 for you on taste). This was also the first time I put dried rice in a bowl with all other ingredients, walked away, and let the Instant Pot do its magic. AND MAGIC IT WAS!
