Beef and Bean Burrito with Guacamole

Ingredients:

  • For the Beef:
    • 1 lb organic ground beef
    • 1 tsp organic chili powder
    • 1 tsp organic garlic powder
    • 1 tsp organic onion powder
    • 1 tsp organic paprika
    • 1 tsp organic cumin
    • Redmonds Real Salt and organic black pepper to taste
  • For the Beans:
    • 1 can of organic black beans, drained and rinsed
    • Redmonds Real Salt and organic black pepper to taste
    • 1 tbsp organic lime juice
  • For the Rice:
    • 1 cup organic rice
    • Redmonds Real Salt and organic black pepper to taste
    • 1 tbsp organic lime juice
    • organic Black pepper to taste
    • Fresh organic cilantro, chopped (for garnish)
  • For the Guacamole:
    • 2 organic avocados, peeled and pitted
    • 1/4 cup organic onion, finely diced
    • 1 clove organic garlic, minced
    • 2 tbsp organic cilantro, chopped
    • 1 tbsp organic lime juice
    • Redmonds Real Salt and organic black pepper to taste
    • 1/2 tsp organic paprika
  • For Assembly:
    • 6 organic non gmo corn tortillas
    • Shredded organic cheese (your choice of cheddar, Monterey Jack, etc.)
    • Fresh organic cilantro, chopped (for garnish)
    • Extra lime wedges

Instructions:

  • Cook the Beef:
    • In a large skillet over medium heat, cook the ground beef. Add chili powder, garlic powder, onion powder, paprika, cumin, salt, and pepper. Stir occasionally until the beef is browned and cooked through. Remove from heat, but leave the oil from the beef in the skillet.
  • Cook the Beans:
    • In a separate pot, heat the beans and season with salt and lime juice. Stir occasionally until warmed through.
  • Cook the Rice:
    • Prepare the rice according to package instructions. Once done, mix in salt, lime juice, and pepper. Garnish with chopped cilantro.
  • Warm the Tortillas:
    • Heat the corn tortillas in the oil leftover from cooking the beef. Flip each tortilla to warm and lightly crisp both sides.
  • Make the Guacamole:
    • In a bowl, combine avocados, diced onions, minced garlic, cilantro, lime juice, salt, pepper, and paprika. Mash the ingredients together until you reach your desired consistency.
  • Assemble the Burritos:
    • Lay each tortilla flat and start by adding a scoop of rice. Add a portion of ground beef and beans. Top with a generous scoop of guacamole.
    • Sprinkle shredded cheese on top and garnish with extra cilantro and a squeeze of lime juice.
  • Serve and Enjoy:
    • Fold the tortillas into burritos and serve with extra lime wedges for a fresh squeeze of lime juice before every bite.
