A Simple, Nourishing Egg Salad (with Avocado Mayo!)

We Use Avocado Mayo, Unlike traditional mayo that’s often loaded with seed oils and preservatives, avocado mayo is made with just a few simple ingredients—no canola, no soy, no hidden junk. It’s creamy, neutral in flavor, and the perfect base for a classic egg salad that feels anything but basic.

Ingredients

  • 6 hard-boiled eggs, peeled and chopped
  • ¼ cup avocado mayo
  • 1 tsp Dijon mustard
  • 1 tsp fresh lemon juice
  • Sea salt + pepper, to taste

Optional add-ins:

  • 1 celery stalk, finely chopped
  • 1–2 tbsp green or red onion, finely chopped
  • ¼ avocado, mashed in for extra creaminess
  • Fresh herbs (like dill, parsley, or chives)
  • A sprinkle of paprika or turmeric for a flavor boost
  • Chopped pickles or olives for a tangy twist

How to Make It

  • Prep your eggs: Chop the hard-boiled eggs and place them in a bowl.
  • Mix the base: In a separate bowl, whisk together avocado mayo, mustard, lemon juice, salt, and pepper.
  • Combine: Fold in chopped with everything is well coated.
  • Chill or serve: Let it sit in the fridge for 20–30 minutes, or enjoy right away.
