Ingredients
- 2 organic avocados, halved with pit removed
- 4 medium organic eggs
- Redmond real salt
- Organic black pepper
- 2 strips of organic bacon (optional)
- 1/2 organic red bell pepper finely chopped (optional)
- 1/4 cup organic spinach chopped (optional)
- Chopped fresh organic herbs for garnish
Instructions
- Preheat the oven to 400 Degrees
- Line a baking sheet or baking pan with foil or parchment paper
- Cut avocados in half and scoop additional flesh out to create space for eggs
- Prop avocado halves against the baking dish or touching the other avocados to avoid spilling over.
- Crack one egg into each avocado half
- Bake for 13-18 minutes, or until the whites are set and the egg yolks are cooked to your liking
- Top with bacon, red bell pepper, spinach, and fresh herbs
- Serve immediately
